Filipino Chicken Adobo is a comforting and flavorful dish that combines tender chicken with the bold and savory tastes of soy sauce, vinegar, and garlic. This traditional Filipino recipe is easy to prepare, making it a popular choice for family dinners and gatherings. The soy sauce provides a deep umami flavor, while the vinegar adds a perfect tanginess that balances the richness of the chicken. The garlic infuses the sauce with its aromatic essence, making each bite irresistible. Best served with warm rice, this dish can be adjusted to suit your personal taste by adding extra seasonings or sweetening it with a bit of sugar.
Ingredients:
2 lbs chicken (cut into serving pieces)
3 pieces dried bay leaves
4 tablespoons soy sauce
6 tablespoons white vinegar
5 cloves garlic (crushed)
1 ½ cups water
3 tablespoons cooking oil
1 teaspoon sugar (optional)
¼ teaspoon salt (optional)
1 teaspoon whole peppercorn
Directions:
In a large bowl, combine the chicken, soy sauce, and garlic. Mix well and marinate for at least 1 hour, preferably up to 3 hours for a more intense flavor.
Heat cooking oil in a pot. Once the oil is hot, pan-fry the marinated chicken pieces for 2 minutes on each side to slightly brown the skin.
Pour in the remaining marinade, including the garlic, and add water. Bring to a boil.
Add the bay leaves and whole peppercorn. Let the chicken simmer for 30 minutes or until it becomes tender.
Stir in the vinegar and cook for an additional 10 minutes, uncovered, to allow the flavors to develop.
Add sugar and salt to taste, adjusting according to your preference. Serve hot with rice and enjoy!
