1 tablespoon olive oil
1 pound kielbasa, sliced into ½-inch pieces
2 cloves garlic, minced
½ cup yellow onion, finely diced
½ cup carrots, peeled and finely diced
½ cup celery, finely sliced
4 cups chicken stock
1½ pounds potatoes, cubed
2 cups heavy cream or whole milk
2 cups shredded cheddar cheese
½ cup shredded Parmesan cheese
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ cup fresh parsley, chopped
Heat olive oil in a large pot over medium-high heat. Add kielbasa and cook for 5–6 minutes until browned. Remove and set aside.
In the same pot, sauté garlic, onion, carrots, and celery for 2 minutes.
Add chicken stock and potatoes. Bring to a boil, then cover and simmer for 15 minutes until potatoes are tender.
Return kielbasa to the pot. Stir in milk, cheddar, Parmesan, salt, and pepper. Cook on low for 5–10 minutes until cheese is melted and soup is creamy.
Garnish with fresh parsley before serving.
