Ingredients
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth (or chicken broth)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1 package (about 9 oz) frozen cheese ravioli
2 cups fresh spinach, chopped
1 tablespoon fresh parsley, chopped (optional)
Grated Parmesan cheese, for serving (optional)
Directions
Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
Add minced garlic to the pot and cook for another 30 seconds, stirring constantly.
Add the diced tomatoes (with juices), vegetable broth, basil, oregano, salt, and pepper. Stir to combine and bring to a simmer.
Add the frozen ravioli to the pot and cook according to the package directions, usually 4-5 minutes, until the ravioli is tender and heated through.
Once the ravioli is cooked, stir in the chopped spinach and let it wilt in the hot soup for 1-2 minutes.
Taste the soup and adjust seasoning with additional salt or pepper if necessary.
Ladle the soup into bowls, garnish with fresh parsley and a sprinkle of Parmesan cheese, if desired.
Serve immediately with crusty bread for dipping.
