Ingredients:
1 ½ cups cooked short-grain rice (or substitute with jasmine rice)
1 egg
1 tablespoon unsalted butter
½ teaspoon toasted sesame oil
1 tablespoon soy sauce (adjust to taste)
1 teaspoon toasted sesame seeds
1 tablespoon finely sliced green onions
½ teaspoon neutral oil (e.g., avocado oil, sunflower oil)
Directions:
Heat the cooked rice and mix it with butter until well combined. Transfer the rice to a large serving bowl.
In a non-stick pan, heat the neutral oil over medium heat and fry the egg sunny side up or to your desired doneness. If you prefer a runny yolk, cook until the whites are nearly set and spoon some of the hot oil over the yolk to help it cook faster.
Once the egg is cooked, place it on top of the buttered rice.
Sprinkle sesame seeds, sesame oil, chopped green onions, and soy sauce over the egg and rice.
