Ingredients:
For the Meatloaf:
1/2 yellow onion, peeled and minced
2 lb ground beef
1 lb ground pork
2 eggs
1 cup dried bread crumbs
1 cup mashed potatoes
2 tsp salt
2 tsp white pepper
2 tsp allspice
2 tbsp butter (softened)
For the Gravy:
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups beef stock or broth
1 tsp Worcestershire sauce
1 tsp soy sauce
1/2 tsp salt
1/2 tsp ground white pepper
1/4 tsp nutmeg (freshly ground, if possible)
1/2 cup sour cream
1/3 cup minced fresh parsley
Directions:
Preheat the oven to 350°F (175°C). Line a baking sheet with heavy-duty foil.
In the bowl of a stand mixer, combine the onion, ground beef, ground pork, eggs, bread crumbs, mashed potatoes, salt, white pepper, and allspice. Mix until everything is well combined but do not overmix to avoid a tough meatloaf.
Shape the meat mixture into an oval loaf, approximately 6x10 inches and about 3 inches high.
Bake the meatloaf for 1 hour and 15 minutes, or until the internal temperature reaches 155°F. Let it rest for 5-10 minutes before slicing.
While the meatloaf is baking, prepare the gravy. In a medium saucepan, melt the butter and whisk in the flour to make a roux. Stir for a couple of minutes until the roux is smooth.
