Ingredients
2 cups organic strawberries, sliced
2 cups organic watermelon, cubed
2 cups semi-thick cucumber rounds, sliced in half
A handful of fresh mint leaves (basil works too!)
¾ cup crumbled goat’s milk feta
1 teaspoon sumac (optional)
For the balsamic vinaigrette:
Juice of 1 lemon
⅓ cup balsamic vinegar
Sea salt and coarse black pepper, to taste
2-3 tablespoons extra virgin olive oil or avocado oil
Alternatively, for homemade lemon poppyseed dressing:
3 tablespoons raw honey
3 tablespoons white vinegar or apple cider vinegar
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
3 tablespoons full-fat mayo
1 tablespoon poppy seeds
½ cup full-fat Greek yogurt
Directions
In a large bowl, combine the sliced strawberries, cubed watermelon, and cucumber rounds.
Add the fresh mint leaves and crumbled feta to the bowl.
In a separate small bowl, whisk together the ingredients for the balsamic vinaigrette or the homemade lemon poppyseed dressing.
Pour the dressing over the salad and toss gently to coat.
