The addition of gooey marshmallows, crunchy graham crackers, and melted chocolate creates the perfect balance of sweet, salty, and creamy. Every bite delivers the essence of campfire s’mores without the need for a fire, making them a great treat for both the summer and the colder months. These cookies are especially fun to make as a family project or for a weekend dessert. If you’re craving a unique cookie that combines nostalgia and flavor, this is the one!
Ingredients:
1 cup salted butter, softened
¾ cup brown sugar
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 ½ cups all-purpose flour
2 tsp cornstarch
1 tsp baking soda
1 tsp salt
2 cups mini marshmallows, divided
2 cups graham crackers, broken into small pieces
½ cup milk chocolate chips
½ cup semisweet chocolate chips
2 Hershey's chocolate bars, broken into pieces
Directions:
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a large bowl, cream together the butter, brown sugar, and granulated sugar for 2-3 minutes until fluffy.
Add eggs and vanilla extract, and beat well until fully combined.
In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix until combined.
Stir in 1 ½ cups of broken graham cracker pieces, 1 ½ cups marshmallows, milk chocolate chips, and semisweet chocolate chips. Mix until evenly distributed.
Scoop 2-3 tablespoons of dough and roll into balls, then place them on the prepared baking sheets, leaving space for spreading.
Bake for 10 minutes. After 10 minutes, remove the cookies from the oven and press a few additional marshmallows, graham cracker pieces, and Hershey’s chocolate on top of each cookie.
Return the cookies to the oven and bake for an additional 1-2 minutes, or until the marshmallows are toasted and the cookies are fully baked.
Let the cookies cool on the baking sheet for 2-3 minutes, then transfer them to a wire cooling rack to cool completely.
