4 boneless skinless chicken breasts (6 oz each)
2 teaspoons Italian seasoning
1 teaspoon kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground pepper
1-2 tablespoons olive oil
3-4 medium ripe tomatoes (about 1 lb), cored, seeded, and chopped

1 tablespoon extra virgin olive oil
2 teaspoons balsamic vinegar
2 tablespoons thinly sliced basil leaves
Ground pepper, to taste

Prepare the bruschetta by mixing chopped tomatoes with salt and garlic in a bowl, then set aside.
Pound chicken breasts to even thickness, about 1 inch.
Combine Italian seasoning, salt, garlic powder, onion powder, and pepper in a small bowl. Season the chicken on both sides with the mixture.
For grilling: Preheat the grill to high heat. Grill chicken for 5-6 minutes per side, until internal temperature reaches 165°F.
For baking: Preheat oven to 400°F. Bake chicken for 10-12 minutes, or until internal temperature reaches 165°F.
Finish the bruschetta topping by stirring in olive oil, balsamic vinegar, fresh basil, and pepper. Adjust seasoning if necessary.
Top each chicken breast with the bruschetta mixture and serve immediately.
