This Southern-style Country Fried Chicken is easy to make using chicken breasts and staple ingredients. It’s an old-fashioned comfort food perfect served with gravy and mashed potatoes for a satisfying family dinner.
4 boneless skinless chicken breasts
1½ cups vegetable oil
Buttermilk Marinade:
2 cups buttermilk (or substitutes)
2 large eggs, whisked
3 teaspoons salt
Breading:
1½ cups all-purpose flour
½ cup plain or Italian breadcrumbs
2½ teaspoons seasoned salt
¾ teaspoon paprika
½ teaspoon cayenne pepper
1½ teaspoons black pepper
Cover each chicken breast with plastic wrap and pound flat to about ½ inch thickness.
Pat chicken dry. In a bowl, whisk eggs, salt, and buttermilk. Add chicken and marinate 1-2 hours or overnight.
Let marinated chicken sit at room temperature for 25-30 minutes before frying.
Transfer chicken to the breading mixture. Flip several times, pressing breading into all surfaces until fully coated. Do one piece at a time.
Heat oil in a skillet to 350°F, enough to cover chicken halfway.
Fry chicken 4-5 minutes per side until golden brown. Flip carefully with a thin spatula.
Transfer chicken to a wire rack to drain excess oil and avoid sogginess.
Repeat for all pieces. Serve with cornbread, mashed potatoes, and gravy.
