This Chicken Caesar Pasta Salad is a delicious mash-up of two classics—Caesar salad and pasta salad—combined into one easy and refreshing 20-minute meal. Featuring rotisserie chicken, crisp Romaine, pasta, and a creamy homemade Caesar dressing, it’s perfect for a hearty lunch or light dinner.
2 teaspoons Dijon mustard
2 tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
¾ cup mayonnaise
2 teaspoons minced garlic
1 teaspoon anchovy paste (optional)
⅓ cup finely grated Parmesan cheese
8 oz uncooked pasta (rotini or penne)
2 hearts of Romaine, chopped
Shredded rotisserie chicken or chopped chicken breasts
Croutons (optional)
Parmesan cheese, for garnish
In a medium bowl, whisk together Dijon mustard, lemon juice, Worcestershire, mayonnaise, garlic, and anchovy paste. Stir in grated Parmesan and ¼ tsp black pepper. Set aside.
Bring salted water to a boil. Cook pasta until al dente, about 10 minutes. Drain and transfer to a large bowl.
Add chopped Romaine and chicken to the pasta.
Pour in the dressing and toss to combine.
Add optional croutons and garnish with Parmesan cheese. Serve immediately or refrigerate until ready.
