Ingredients:
For the Streusel Topping:
2/3 cup all-purpose flour
1/3 cup light brown sugar
¼ teaspoon salt
¼ cup unsalted butter (melted)
For the Muffins:
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
¼ cup vegetable oil
½ cup granulated sugar
1 large egg
½ teaspoon vanilla extract
½ cup Greek yogurt
1 ½ cups diced fresh strawberries
For the Cream Cheese Filling:
6 oz cream cheese (room temperature)
3 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon cornstarch

¾ cup powdered sugar
1 ½ – 2 ½ teaspoons milk or cream
Directions:
Preheat Oven and Prepare Pan:
Preheat the oven to 425°F (220°C). Line a muffin tin with paper liners and set aside.
Make the Streusel Topping:
In a small bowl, combine flour, brown sugar, and salt. Add melted butter and mix with a fork until coarse crumbs form. Set aside.
Prepare the Muffin Batter:
