This Tuscan Garlic Salmon is a flavorful and easy-to-make dish, perfect for a quick weeknight dinner. Salmon fillets are pan-seared and served with a savory garlic butter sauce that includes spinach, tomatoes, and basil. The dish is rich, creamy, and packed with Mediterranean flavors. It comes together in just about 30 minutes, making it ideal for busy days when you want a comforting yet healthy meal.
1 lb (450g) salmon fillets
2 tablespoons olive oil
1 tablespoon olive oil or unsalted butter
¼ teaspoon red pepper flakes
1 teaspoon smoked paprika (or more, to taste)
Kosher salt and freshly ground black pepper, to taste
1 teaspoon Italian seasoning
1 medium onion, chopped
4 cloves garlic, minced
4 Roma tomatoes, chopped
6 oz fresh spinach
¼ cup fresh basil leaves, chopped
½ cup (60ml) vegetable or chicken stock (or dry white wine)
2 tablespoons high-quality olive oil (optional)
Add 2 tablespoons of olive oil to a large skillet over medium-low heat. Season the salmon fillets with red pepper flakes, paprika, Italian seasoning, salt, and pepper.
Cook the salmon fillets in the skillet for 4-5 minutes per side, until the fish is cooked through. Remove the salmon from the skillet and set aside.
In the same skillet, add 1 tablespoon of olive oil or butter. Add the garlic and onion and cook until fragrant and translucent.
Add the chopped tomatoes, spinach, fresh basil, and vegetable or chicken stock. Cook for 3-5 minutes until the spinach wilts and the tomatoes release their juices.
Add the cooked salmon back into the skillet to reheat quickly, spooning some of the sauce over the fish.
Drizzle with additional high-quality olive oil if desired. Serve immediately and enjoy!
