Cajun Sausage and Rice Skillet is a flavorful one-pan meal featuring smoky sausage, vibrant bell peppers, and perfectly cooked rice infused with bold Cajun spices. This hearty dish is easy to prepare, versatile with protein options, and perfect for a satisfying weeknight dinner or meal prep.
Smoked sausage (such as andouille or kielbasa), sliced
Long-grain white rice (or brown rice/quinoa as substitute)
Red and green bell peppers, diced
Yellow onion, diced
Fresh garlic, minced
Cajun seasoning (paprika, cayenne, thyme, garlic powder, oregano)
Chicken broth
Olive oil
Optional: fresh parsley, sliced green onions, hot sauce
Slice the smoked sausage into bite-sized rounds. Dice bell peppers and onion, mince garlic. Rinse rice under cold water until clear.
Heat olive oil in a large skillet over medium heat. Cook sausage for 5-7 minutes until browned and slightly crispy. Remove and set aside.
In the same skillet, sauté onions, bell peppers, and garlic for 3-4 minutes until softened and fragrant.
Add rinsed rice to the skillet and stir to coat with oil and veggies. Toast rice for about 2 minutes until nutty aroma develops.
Pour in chicken broth and add Cajun seasoning. Stir well and bring to a boil.
Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and liquid absorbed.
Return sausage to skillet and stir into rice and veggies. Cook an additional 3-5 minutes to blend flavors.
Garnish with fresh parsley or green onions and serve hot.
