1 lb ground turkey (or ground chicken)
½ lb ground sausage
½ small sweet or white onion, finely diced
½ cup Italian-style breadcrumbs
1 large egg, whisked
¼ cup fresh parsley, finely chopped
3 cloves garlic, finely minced
¼ tsp red pepper flakes (optional)
1 tsp salt
½ tsp black pepper
¼ cup tomato sauce
6 oz mozzarella cheese, sliced
¼ cup pesto sauce
For the meatloaf glaze
¾ cup tomato sauce
2 tbsp ketchup
½ tsp dried oregano
½ tsp dried basil
¼ tsp garlic powder
¼ tsp salt
⅛ tsp black pepper
Directions
Preheat the oven to 350°F (175°C). Line a baking sheet or large baking dish with foil for easy cleanup.
In a large mixing bowl, combine ground turkey, ground sausage, onion, breadcrumbs, egg, parsley, garlic, red pepper flakes, salt, pepper, and tomato sauce. Mix until well combined using your hands or a spoon.
On a foil-lined baking sheet, shape half of the meat mixture into a rectangular shape, about 9x5 inches.
Place slices of mozzarella cheese down the center of the meatloaf, then top with pesto sauce.
