1 tablespoon vegetable oil
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
½ teaspoon sweet paprika
½ teaspoon garlic powder
½ teaspoon dried thyme
½ teaspoon dried basil
¼ cup sriracha sauce
2 tablespoons honey
1 tablespoon low sodium soy sauce
1 tablespoon white vinegar
2 tablespoons lime juice
3 cloves garlic, minced
1 tablespoon cornstarch
Optional garnish: chopped fresh cilantro or parsley, sesame seeds, lime wedges
Preheat the oven to 375°F and grease a 9x13 baking dish.
In a bowl, whisk together sriracha, honey, soy sauce, vinegar, lime juice, and garlic. Set aside.
Heat oil in a skillet over medium heat. Season chicken with salt, pepper, paprika, garlic powder, thyme, and basil. Brown chicken for 2-3 minutes per side.
Transfer chicken to the baking dish and pour sauce over it, coating evenly. Cover with foil and bake for 20 minutes.
Remove foil and continue baking uncovered for another 15 minutes, or until internal temperature reaches 165°F.
Remove dish from oven. Mix 3 tablespoons of the sauce with cornstarch in a small cup, then stir slurry back into the baking dish. Return to oven for 1-2 minutes to thicken.
Let rest for 5 minutes. Garnish with herbs, sesame seeds, and lime wedges. Serve hot.
