2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
2 cups mashed ripe bananas (about 4 large bananas)
½ cup vegetable oil
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
⅓ cup brown sugar (optional, for topping)
Preheat the oven to 350°F (175°C). Grease a 9×5 baking loaf pan and line with parchment paper, leaving overhang for easy removal.
In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl, whisk together mashed bananas, vegetable oil, brown sugar, eggs, and vanilla extract until smooth.
Gradually stir in the dry ingredients, mixing until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula. If desired, sprinkle the top with extra brown sugar.
Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. Tent the bread with foil halfway through to prevent over-browning.
Allow the bread to cool for 15 minutes before removing it from the pan. Let it cool completely before slicing and serving.
