1 lb cooked shrimp, peeled and deveined
1 cup sushi rice, cooked and seasoned
1 ripe avocado, sliced
1/4 cup mayonnaise
1 tablespoon sriracha sauce (adjust to taste)
1 tablespoon soy sauce
1 teaspoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon garlic powder
1 tablespoon sesame seeds (optional, for garnish)
Fresh cilantro, chopped (for garnish)
Nori sheets (optional, for serving)
Cook the sushi rice according to package instructions and season with rice vinegar, sesame oil, and a pinch of salt. Set aside to cool slightly.
In a small bowl, mix the mayonnaise, sriracha sauce, soy sauce, and garlic powder to make the spicy mayo. Taste and adjust the spice level to your preference.
