For the Dough:
1 cup milk (lukewarm)
6 tablespoons unsalted butter
½ cup granulated sugar
4 ½-5 cups all-purpose flour
2 ¼ teaspoons instant yeast
1 ½ teaspoons salt
½ cup mashed banana (about 1 large banana)
For the Filling:
4 tablespoons unsalted butter (very soft)
½ cup light brown sugar (packed)
1 tablespoon ground cinnamon
2 large bananas (thinly sliced)
For the Cream Cheese Frosting:
4 ounces cream cheese (softened)
4 tablespoons unsalted butter (softened)
1 ½ cups powdered sugar
1 teaspoon vanilla extract
Warm the milk in a saucepan with butter and sugar until the butter is melted and the temperature reaches 120°F-130°F (for instant yeast).
In a stand mixer bowl, combine flour, yeast, and salt. Add the milk mixture and mashed banana. Mix until the dough begins to come together.
Knead the dough with a dough hook on medium speed for 6-8 minutes, or until smooth and elastic. If needed, add extra flour a tablespoon at a time.
Let the dough rise in a lightly greased bowl for 1 to 1 ½ hours until doubled in size.
Roll the dough out into an 18×12-inch rectangle. Spread softened butter on top and sprinkle with the cinnamon-sugar mixture. Layer banana slices over the top.
Roll the dough tightly from the long edge, pinching the seam to seal. Cut into 12 rolls.
Place the rolls into a greased 9×13-inch pan, spiral side up. Let rise for 45 minutes until puffy.
