This Ground Beef and Broccoli is a quick and easy 30-minute meal with a flavorful sauce that your family will love. You can make this with ground beef, chicken, or turkey, and even add other vegetables you have on hand. This recipe is perfect for a simple dinner or meal prep for the week!
For the Beef and Broccoli:
1 tablespoon peanut oil (or vegetable/olive oil)
3 cups broccoli florets, washed and patted dry
1 lb ground beef
1 yellow onion, diced
1 red bell pepper, sliced
Salt and white pepper to taste
For the Sauce:
2 tablespoons cornstarch
2 tablespoons cold water
1 cup beef broth
¼ cup soy sauce
3 tablespoons packed brown sugar
1-2 tablespoons honey
2 cloves garlic, minced
½ teaspoon ground ginger
1 teaspoon toasted sesame oil
For Serving:
3 cups cooked rice (any kind)
Combine cornstarch and cold water in a container and shake to combine. Set aside.
In a large pan, heat oil over medium heat. Add broccoli and toss to coat. Cook for 4-5 minutes until slightly softened, then set aside.
In the same pan, season the ground beef with salt and white pepper. Cook and crumble the beef and diced onions over medium-high heat until browned and cooked through. Drain any excess grease.
Add sliced bell peppers and cook for 1 minute.
Add the prepared sauce mixture (beef broth, soy sauce, brown sugar, honey, garlic, ginger, and sesame oil) to the pan and bring to a boil.
Reduce heat and let it simmer for 2-3 minutes. Shake the cornstarch mixture again and slowly stir it into the sauce.
Continue to simmer until the sauce thickens to your desired consistency.
Reduce heat to low, return the broccoli to the pan, and stir to combine and heat through.
Serve over cooked rice, garnished with optional green onions or sesame seeds.
