This Garlic Butter Steak and Potatoes is a quick and flavorful one-pan meal made with juicy steak strips, golden potatoes, and a rich garlic herb butter sauce. Ready in under 30 minutes, it’s a hearty and satisfying dish perfect for any night of the week.
1 1/2 lb (650g) flank steak, sliced against the grain
1 1/2 lb (650g) baby yellow potatoes, quartered
1 tablespoon olive oil
3 tablespoons butter, divided
5 garlic cloves, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh oregano, chopped
Salt and fresh cracked pepper, to taste
Crushed red chili pepper flakes, optional
Steak Marinade:
1/3 cup soy sauce
1 tablespoon olive oil
1 tablespoon hot sauce (e.g. Sriracha)

In a bowl, mix steak strips with soy sauce, olive oil, pepper, and hot sauce. Set aside to marinate.
In a skillet over medium-high heat, combine 1 tbsp olive oil and 1 tbsp butter. Add potatoes and cook 4 minutes without stirring, then stir and cook another 4–5 minutes until golden and tender. Remove and set aside.
In the same skillet, add remaining 2 tbsp butter, garlic, chili flakes, and herbs. Add steak strips in one layer and cook 1 minute per side until browned.
(Optional) Add reserved marinade and cook 1 more minute. Return potatoes to skillet and heat through. Adjust seasoning.
Remove from heat and garnish with more herbs, chili flakes, or parmesan if desired. Serve immediately.
