Ingredients:
2 cucumbers, washed and sliced
1 cup crab meat (fresh or canned)
1/4 red onion, thinly sliced
1 cup cherry tomatoes, halved
1 tablespoon rice vinegar
1 tablespoon lime juice
2 tablespoons fresh parsley or dill, chopped
2 tablespoons olive oil
Salt, to taste
Pepper, to taste
Directions:
Wash the cucumbers thoroughly and slice them into thin rounds. Peel the skin if desired.
If using fresh crab, remove it from the shell and chop into small pieces. If using canned crab, simply drain it and break it into smaller pieces.
In a large bowl, combine the cucumber slices, crab meat, red onion, and cherry tomatoes.
In a small bowl, whisk together rice vinegar, lime juice, olive oil, salt, and pepper to create the dressing.
