100g cornflour (cornstarch)
1 tsp garlic and ginger paste
1 egg white
2 spring onions, chopped
Vegetable oil for frying
For the Marinade:
2 tbsp dark soy sauce
1 tbsp garlic and ginger paste
1 tsp sesame oil
1 tsp sugar
1 tsp white pepper
For the Stir-Fry Sauce:
3 tbsp dark soy sauce
4 tbsp honey
1 tbsp sriracha
2 tbsp lemon juice
Slice the chicken breast into thin strips and place in a large mixing bowl.
Add the marinade ingredients (dark soy sauce, garlic and ginger paste, sesame oil, sugar, and white pepper) to the chicken. Mix and leave to rest for at least 10 minutes.
In a separate bowl, whisk the egg white and pour it over the marinated chicken. Then, add the cornflour and coat each piece of chicken thoroughly.
Heat vegetable oil in a wok or frying pan to 180°C (350°F). Fry the chicken in batches for 1-2 minutes, then fry again for 2-3 minutes until crispy.
In a clean pan, heat a tablespoon of oil. Add garlic and ginger paste and fry for 5-10 seconds. Add the stir-fry sauce ingredients (honey, soy sauce, sriracha, and lemon juice) and stir for 30 seconds, or until thickened.
Add the crispy chicken to the sauce and mix until evenly coated.
Garnish with chopped spring onions and serve immediately.
