Ingredients
1 lb (450g) chicken breasts or thighs, boneless and skinless
1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
2 medium carrots, peeled and sliced
2 celery stalks, sliced
4 cups (1L) chicken broth
1 cup (240ml) heavy cream
1 teaspoon dried thyme
Salt and pepper, to taste
1/2 cup (80g) frozen peas
1 tablespoon fresh parsley, chopped (optional)
Directions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken breasts (or thighs) and cook until browned and cooked through, about 7-8 minutes per side. Remove from the pot and set aside to rest.
In the same pot, add the diced onion, garlic, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened.
Add the chicken broth and thyme to the pot. Bring the soup to a simmer and cook for 10 minutes, until the vegetables are tender.
While the soup is simmering, shred the cooked chicken using two forks or dice it into bite-sized pieces. Add the chicken back into the pot.
Stir in the heavy cream and frozen peas, and continue to cook for an additional 5 minutes, allowing the soup to thicken slightly.
Season with salt and pepper to taste. If desired, garnish with fresh parsley.
