The salmon fillets are baked in individual foil packets with asparagus, garlic, butter, and a tangy lemon and hot sauce drizzle. 1 lb (450g) salmon fillets, divided
2 tablespoons vegetable or chicken broth
1 ½ tablespoons fresh lemon juice
1 tablespoon hot sauce (e.g., Sriracha)
4 teaspoons minced garlic (4 cloves)
Salt and freshly ground black pepper, to taste
3-4 tablespoons butter, diced into small cubes
2 tablespoons fresh chopped parsley or cilantro
1 lb (450g) medium-thick asparagus, woody ends trimmed
Preheat your oven to 425ºF (220ºC). Cut two sheets of 14 by 12-inch (35 x 30 cm) heavy-duty aluminum foil and lay them separately.
In a small bowl, combine broth, lemon juice, and hot sauce.
Season both sides of the salmon fillets with salt and pepper, and divide them onto the aluminum foil near the center. Add trimmed asparagus beside the salmon.
Sprinkle garlic over the salmon fillets and drizzle the broth, lemon, and hot sauce mixture generously over both the salmon and asparagus.
Divide butter cubes evenly among the foil packets, layering them over the salmon and asparagus.
Wrap the foil tightly around the salmon and asparagus but leave some space for heat circulation.
Transfer the foil packs to a baking sheet and bake in the preheated oven for 9–12 minutes.
Unwrap the salmon foil packets carefully and drizzle with more lemon juice. Garnish with fresh parsley or cilantro and a slice of lemon. Serve immediately.
