This Slow Cooker Pork Tenderloin with a Honey Balsamic Glaze is the perfect dish when you want minimal effort for maximum flavor. The garlic herb rub adds a savory punch, while the honey balsamic glaze provides a sweet and tangy finish that perfectly complements the pork. Slow cooking ensures the pork becomes incredibly tender, while the glaze enhances the natural juices, making it an ideal dish for busy weeknights or a special occasion. This dish is best served over mashed potatoes, rice, or pasta to soak up the delicious sauce.
Ingredients
1 pork tenderloin (about 1 lb)
1 teaspoon garlic powder
1 teaspoon dried parsley
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon onion powder
¼ teaspoon paprika
⅓ cup low-sodium chicken broth
3 tablespoons balsamic vinegar
2 tablespoons honey
1 tablespoon ketchup
2 teaspoons cornstarch
Directions
If your pork tenderloin is too long for the slow cooker, cut it in half crosswise. If it fits, leave it whole.
In a small bowl, combine garlic powder, parsley, salt, pepper, onion powder, and paprika. Rub the seasoning mix all over the pork tenderloin.
Place the seasoned pork tenderloin into the slow cooker.
In a medium bowl, whisk together chicken broth, balsamic vinegar, honey, ketchup, and cornstarch. Pour this glaze over the pork in the slow cooker.
Cover the slow cooker and cook on low for 2-3 hours or on high for 1.5-2 hours, until the pork reaches an internal temperature of 150-160°F.
Once done, remove the pork tenderloin from the slow cooker and let it rest for 5 minutes before slicing.
If you prefer a thicker glaze, strain the remaining sauce into a small pot, add 1 teaspoon of cornstarch mixed with 1 teaspoon of water, and cook over medium-high heat until thickened.
Serve the sliced pork tenderloin with the glaze on top.
