This Asian Salmon and Noodles recipe combines tender salmon with savory noodles, all drenched in a flavorful, slightly spicy Sriracha-honey sauce. Ingredients:
For the Asian Noodles:
1 tablespoon olive oil
5 green onions, chopped
1 tablespoon sesame seeds
10 button mushrooms, sliced (or 1 Portobello mushroom)
1/4 cup soy sauce
1/4 cup honey
1/4 cup chicken stock
2 tablespoons sesame oil
1 teaspoon Sriracha sauce (or any hot sauce of your choice)
2 cups snow peas, ends trimmed (about 60 snow peas)
1/2 lb fettuccine pasta (or pasta of your choice)
For the Asian Salmon:
2 salmon fillets
Salt and pepper, to taste
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons soy sauce
Directions:
Preheat your broiler. Heat a large skillet on high heat. Season the salmon fillets generously with salt and pepper.
Add oil to the hot skillet. Once the oil is sizzling, place the salmon in the skillet, skin side up, and sear for 4 minutes.
Flip the salmon over and sear the skin side for another 3 minutes. At this point, you can remove the skin easily if preferred.
Mix honey and soy sauce together and warm it slightly. Brush the honey-soy sauce on the top of the salmon.
Place the salmon under the broiler for 3 minutes, keeping an eye on it to avoid burning. Brush with more sauce midway through broiling.
Meanwhile, cook fettuccine pasta according to package instructions. Drain and set aside.
In a large frying pan, heat olive oil and sauté chopped green onions and sesame seeds for 2-3 minutes.
Add sliced mushrooms and cook for another 2 minutes. Remove the pan from heat, then stir in soy sauce, honey, chicken stock, sesame oil, and Sriracha. Mix everything well.
Boil the snow peas in a separate pan for 3-5 minutes until tender but still crunchy. Drain.
Add the cooked pasta and snow peas to the mushroom and sauce mixture. Toss to combine and heat everything through.
Serve the pasta and vegetable mixture with the broiled salmon on top.
