Ingredients:
4 to 6 medium Russet potatoes
1 lb lean ground beef
1 packet (1 ounce) taco seasoning
Toppings:
Shredded lettuce
Cheddar cheese
Sour cream
Salsa
Guacamole (optional)
Green onions (optional)
Directions:
Preheat oven to 400°F (200°C).
Wash potatoes in water, then pat dry with paper towels. Poke a few holes in each potato with a fork, then wrap each of them in foil. Bake potatoes for 1 hour.
Carefully remove hot potatoes from oven and set aside to cool slightly.
While the potatoes are baking, heat a large skillet over medium-high heat. Brown and crumble ground beef. Drain any excess grease.
