The combination of the shrimp's delicate sweetness with the creamy garlic butter sauce is balanced perfectly by the crunchy texture of the peppers. This dish can be enjoyed as a light dinner, a special appetizer, or a crowd-pleasing party dish. For a variation, feel free to substitute shrimp with chicken or use a different variety of bell peppers to add more color to the plate.
4 large bell peppers (any color)
1 lb shrimp, peeled and deveined
3 tablespoons butter
4 cloves garlic, minced
1 teaspoon lemon juice
1/4 teaspoon paprika
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Fresh parsley for garnish
Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook for 3-4 minutes until the shrimp turns pink and opaque.
Stir in the lemon juice and cook for an additional minute. Remove from heat.
Stuff the bell peppers with the shrimp mixture, making sure to pack them in evenly.
If desired, sprinkle grated Parmesan cheese over the top of each stuffed pepper.
Bake in the preheated oven for 15-20 minutes until the peppers are tender and the cheese is melted.
Garnish with freshly chopped parsley and serve immediately.
