Ingredients:
1 stick unsalted butter, softened
½ cup light brown sugar, firmly packed
½ cup granulated sugar
1 teaspoon pure vanilla extract
1 egg, at room temperature
1 ½ cups all-purpose flour, spooned and leveled
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon table salt
1 cup semisweet chocolate chips, plus more for topping
6 graham crackers, broken in half
3 milk chocolate candy bars
12 marshmallows, regular size
Directions:
Preheat your oven to 350°F (175°C). Line two light-colored baking sheets with parchment paper.
In the bowl of a stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the vanilla extract and egg, scraping down the sides of the bowl as necessary.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter-sugar mixture, mixing just until combined.
Stir in the chocolate chips.
Place the graham cracker halves, chocolate bar pieces, and marshmallows on your baking sheets.
Using a large cookie dough scoop (about 3 tablespoons per cookie), portion the dough and slightly flatten it into a disc shape, placing it on top of the marshmallows. Top with additional chocolate chips.
