2 pounds lean ground beef
2 eggs, lightly beaten
½ cup quick-cooking oats
⅓ cup milk
⅓ cup ketchup
⅓ cup finely chopped onion
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon pepper
For the Glaze:
1 cup ketchup
¼ cup brown sugar
2 teaspoons cider vinegar
Preheat oven to 350°F.
Line a wire rack with foil and place it inside a baking sheet.
In a small bowl, mix together the glaze ingredients and set aside.
In a large mixing bowl, combine all meatloaf ingredients and mix until well combined.
Form the meat mixture into a 9x5-inch loaf and place it on the prepared rack.
Spread half of the glaze over the top and sides of the loaf.
Bake for 30 minutes.
Remove from the oven, spread the remaining glaze over the meatloaf.
Return to the oven and bake for another 35 to 45 minutes, or until a thermometer reads 160°F.
Let the meatloaf rest for 15 minutes before slicing and serving.
