1 cup panko bread crumbs
1 cup milk
1 medium yellow onion, diced
2 cloves garlic, minced
1 tablespoon butter
2 pounds ground beef
1 large egg
1 tablespoon Worcestershire sauce
½ teaspoon dried thyme (or 1 tablespoon fresh thyme)
1 teaspoon kosher salt
Sauce Ingredients:
½ cup ketchup
1 tablespoon spicy brown mustard
1 tablespoon brown sugar
Preheat oven to 350°F and line a baking sheet with parchment paper or foil.
Combine panko bread crumbs and milk in a small bowl; soak while preparing other ingredients.
Melt butter in a pan over medium heat, sauté diced onion until fragrant and slightly browned (3-5 minutes). Add minced garlic and cook for 2-3 more minutes; remove from heat and cool.
In a large bowl, combine ground beef, egg, soaked bread crumbs, Worcestershire sauce, thyme, salt, and sautéed onion and garlic mixture. Mix gently with hands, avoid overworking.
Shape mixture into a loaf on the lined baking sheet. Use a sharp knife to create a crisscross pattern on top for a crispy exterior.
Bake uncovered for 40 minutes. Meanwhile, mix ketchup, mustard, and brown sugar in a small bowl.
After 40 minutes, spread sauce over the meatloaf and continue baking for an additional 30-35 minutes or until internal temperature reaches 160°F.
Remove from oven and let rest for a few minutes before slicing and serving.
