Made with buttermilk biscuits and stuffed with scrambled eggs, sausage, and cheese, these breakfast bombs are easy to prepare and bake to a golden, buttery perfection. Ingredients:
1 can (8-count) Southern Homestyle Buttermilk Biscuits (not flaky)
1 ½ cups shredded mild cheddar cheese, divided
1 cup scrambled eggs (roughly 4-5 eggs, divided)
8 pre-cooked sausage links, chopped (about 1 cup, divided)
¼ cup unsalted butter, melted
1 tsp kosher salt
Fresh parsley, chopped (for garnish)
Directions:
Preheat the oven to 375°F (190°C). Spray a 12-inch oven-safe skillet with nonstick cooking spray and set aside.
Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about ⅛-inch thickness.
Top each flattened biscuit with an equal amount of shredded cheese, leaving room around the edges. Add scrambled eggs and chopped sausage on top of the cheese.
Pinch the sides of the biscuit to seal the filling inside. Place each "bomb" (pinched side down) into the prepared skillet.
In a small bowl, whisk together the melted butter and salt. Brush half of the butter mixture over the tops of the bombs.
Bake for 20-23 minutes, or until the bombs are golden brown.
Once done, brush the remaining butter mixture over the bombs, garnish with fresh parsley, and serve.
