Ingredients
1 ½ pounds chicken wings (wingettes and/or drumettes)
2 tablespoons potato starch (or cornstarch)
1 tablespoon baking powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Cooking oil spray (for the sheet pan)
For the honey lemon pepper sauce
½ cup honey
1 lemon, zested
¼ cup lemon juice
1 tablespoon minced garlic
1 tablespoon butter (unsalted)
1-2 teaspoons ground black pepper (to taste)
1 pinch salt
Directions
Preheat the oven to 450°F (230°C).
Pat the chicken wings dry with a paper towel to ensure crispiness.
In a bowl, toss the wings with potato starch, baking powder, garlic powder, onion powder, and paprika until evenly coated.
Lightly spray a parchment-lined sheet pan with oil and arrange the wings in a single layer. Spray the tops of the wings with a little more oil.
Decrease the oven temperature to 425°F (220°C) and bake the wings for 35-40 minutes, flipping them halfway through and spraying more oil if needed.
While the wings are baking, prepare the sauce. In a small saucepan, add honey, lemon juice, lemon zest, garlic, butter, salt, and pepper. Stir the mixture and simmer over medium heat for 3-5 minutes, until well combined and slightly thickened.
Once the wings are done, transfer them to a bowl and toss them in the honey lemon pepper sauce until well coated.
