2 tablespoons olive oil
1 tablespoon butter
3 large onions, thinly sliced
1 tablespoon balsamic vinegar
1 lb ground beef
½ cup breadcrumbs
2 large eggs, beaten
½ cup shredded Gruyère cheese (divided)
¼ cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
1 packet French onion soup mix
Heat olive oil and butter in a large skillet over medium heat. Add onions and cook, stirring occasionally, until caramelized (about 20-25 minutes). Stir in balsamic vinegar and cook 2 more minutes. Set aside to cool slightly.
Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or grease lightly.
In a large bowl, combine ground beef, breadcrumbs, eggs, half the Gruyère cheese, beef broth, Worcestershire sauce, garlic powder, thyme, salt, pepper, and French onion soup mix. Mix gently until combined.
Fold in about two-thirds of the caramelized onions, reserving the rest for topping.
Shape meat mixture into a loaf on the prepared pan, smoothing the top.
Bake for 40-45 minutes. Remove from oven, top with remaining onions and Gruyère cheese.
Set oven to broil. Broil meatloaf for 3-5 minutes until cheese is melted and golden.
Let rest for 10 minutes before slicing. Garnish with parsley if desired and serve.
