This healthier Bacon, Egg, and Potato Hash is a simple and satisfying one-skillet meal that can be ready in about 30 minutes. It combines crispy bacon, tender potatoes, and perfectly cooked eggs, making it an ideal choice for breakfast, brunch, or even a quick dinner.
6 slices center cut bacon, diced
2 tsp olive oil
1 1/2 lbs russet potatoes, peeled and diced into 3/4 inch chunks
1/2 tsp kosher salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/3 cup minced chives or chopped green onions
4 large eggs
1/4 cup shredded reduced-fat sharp cheddar cheese
Black pepper, to taste
Cook the diced bacon in a medium skillet over medium-high heat until almost done. Remove and drain on paper towels.
Drain and wipe out the bacon grease from the skillet. Return to heat and add olive oil. Once hot, add potatoes in a single layer. Cook without stirring for a few minutes to develop a crust, then flip.
