This creamy shrimp and corn soup is the perfect dish for those chilly evenings when you crave something rich, flavorful, and filling. The combination of tender shrimp, sweet corn, and a silky blend of milk and cream creates a comforting, almost bisque-like texture. The Old Bay seasoning adds a hint of spice, elevating the flavors and giving the soup an extra kick. It's a one-pot meal that is easy to prepare, and the result is a hearty dish that will satisfy your hunger and warm you up from the inside out. You can substitute the shrimp with chicken or other seafood if preferred, and for a lighter version, use low-fat milk instead of whole milk and heavy cream.
Ingredients
4 tablespoons butter
½ cup celery, chopped
4 green onions, sliced (white and green parts separated)
4 cloves garlic, minced
½ teaspoon salt (plus more to taste)
¼ teaspoon black pepper (plus more to taste)
¼ cup all-purpose flour
2 cups whole milk
1 cup heavy whipping cream
1 (15-ounce) can cream-style corn
1 ½ cups corn kernels (fresh or frozen)
1 pound shrimp, peeled, deveined, and uncooked
2 teaspoons Old Bay seasoning (plus more to taste)
Directions
Warm a large pot over medium-high heat and add butter.
Once melted, add celery and the white parts of the green onions. Cook until vegetables are tender, approximately 3 minutes.
Add garlic, salt, and black pepper. Stir and cook for an additional minute until garlic becomes fragrant.
Sprinkle flour into the pot, stirring to coat the vegetables evenly.
Remove the pot from heat, then slowly pour in milk and heavy cream.
Return the pot to heat, increase the temperature to high, and bring the mixture to a boil, stirring constantly.
Once boiling, reduce the heat and let the soup simmer.
Add the cream-style corn and corn kernels. Stir and simmer for approximately 5 minutes until the soup thickens.
Add shrimp and Old Bay seasoning to the soup. Stir well and cook until the shrimp is cooked through and no longer translucent, about 3 minutes.
Taste the soup and adjust the seasoning as needed.
Serve the soup in bowls, garnished with the green parts of the green onions, and enjoy warm.
