For the Chicken
2 large boneless/skinless chicken breasts
2 teaspoons Italian seasoning
Salt and pepper, to taste
2 tablespoons butter, melted
1-2 tablespoons olive oil
For the Sauce
10.5 oz. cream of chicken soup
1 ½ cups milk
1 cup sour cream, at room temperature
½ teaspoon onion powder
1 oz. packet ranch seasoning mix
Season and Sear the Chicken:
Slice the chicken into 2-3 thinner slices. You may also pound them with a meat tenderizer to ensure they’re about ½ inch thick.
Season both sides of the chicken with Italian seasoning, salt, and pepper.
Brush one side of each chicken piece with melted butter (make sure it’s not too hot).
Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 4-5 minutes per side until a golden brown crust develops. Remove and set aside.
Make the Sauce:
In the same skillet, add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir everything together and bring to a gentle simmer.
