Ingredients:
5 vegetable gyozas (frozen)
2 spring onions, thinly sliced
½ - 1 bulb pak choi, sliced into chunks
20g ginger, finely grated
1 clove garlic, minced
½ courgette, spiralized
500ml vegetable stock
1 tbsp soy sauce
1 tbsp chili oil
Salt & pepper to taste
Directions:
Prepare the Vegetables:
Finely chop the spring onions, separating the white and green parts. Spiralize the courgette, and grate the ginger. Mince the garlic.
Cook the Gyoza:
In a medium saucepan, heat the chili oil over low heat. Add the white part of the spring onions and season with a pinch of salt. Fry for a couple of minutes until fragrant. Then, add the gyozas and cook for 2 minutes.
Add the Aromatics:
Add the minced garlic and grated ginger to the pan and cook for another minute until fragrant.
Prepare the Broth:
Pour in the vegetable stock and soy sauce, and add the pak choi and spiralized courgette. Stir everything to combine.
Simmer the Soup:
Cover the pot with a lid and simmer for 7 minutes, allowing the flavors to meld together and the gyozas to cook through.
