Mini Meatloaf Muffins are a playful and modern take on the traditional meatloaf. These bite-sized versions are packed with the same savory, hearty flavors but cook much faster, making them perfect for busy weeknights or family gatherings. The combination of ground beef, breadcrumbs, and classic seasonings like Worcestershire sauce and garlic powder provides a rich, satisfying base, while a dollop of ketchup adds the finishing touch. These muffins are versatile and can be served with a variety of sides, from mashed potatoes to a fresh green salad.
Ingredients:
1 lb ground beef
1 egg, beaten
½ cup breadcrumbs
¼ cup ketchup, plus extra for topping
¼ cup milk
½ onion, finely chopped
1 teaspoon garlic powder
1 teaspoon Worcestershire sauce
½ teaspoon salt
½ teaspoon black pepper
Directions:
Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with cooking spray or oil.
In a large mixing bowl, combine the ground beef, egg, breadcrumbs, ketchup, milk, chopped onion, garlic powder, Worcestershire sauce, salt, and pepper. Mix until the ingredients are well incorporated, but avoid overworking the meat.
Divide the meat mixture evenly among the muffin cups, pressing gently to shape each muffin. Top each meatloaf muffin with a small spoonful of ketchup.
Bake in the preheated oven for 20-25 minutes, or until the meatloaf muffins are cooked through and no longer pink in the center. Use an internal thermometer to ensure it reads 160°F (71°C).
Remove from the oven and let stand for 5 minutes before carefully removing the meatloaf muffins from the tin.
Serve warm, garnished with additional ketchup or barbecue sauce, if desired.
