3 medium cucumbers, peeled and sliced ¼ inch thick
1 medium white onion, sliced and separated into rings
3 medium tomatoes, chopped
½ cup vinegar of choice (apple cider, white, or rice vinegar)
¼ cup granulated sugar (or sugar substitute)
1 cup water
2 teaspoons salt
½ teaspoon coarse black pepper
2 tablespoons vegetable oil (olive oil preferred)
½ teaspoon dried basil
½ teaspoon dried parsley
Combine cucumbers, tomatoes, onion, sugar, water, vinegar, oil, salt, pepper, and dried herbs in a large bowl. Mix well.
Refrigerate the mixture for at least 2 hours to allow the flavors to marinate.
Before serving, bring to room temperature or serve cold with or without the liquid.
