2 tablespoons olive oil
1 lb lean ground beef
1 medium yellow onion, diced
1 red bell pepper, diced
1.5 lbs Yukon gold potatoes, peeled and cubed
1 cup beef stock or water
2 tablespoons Worcestershire sauce
1 teaspoon Dijon mustard
2–3 green onions, chopped
Spices:
1 tablespoon cumin, divided
2 teaspoons paprika, divided
2 teaspoons dried thyme, divided
1 teaspoon garlic powder, divided
1 teaspoon salt, divided
½ teaspoon black pepper, divided
Heat olive oil in a large skillet over medium heat.
Add ground beef and season with half the spices.
Cook until browned, breaking apart with a spatula.
Remove beef from skillet and set aside.
In the same skillet, add potatoes and season with the remaining spices.
Pour in beef stock, cover, and cook for 8–10 minutes until potatoes are tender and most liquid evaporates.
Add diced onion and red bell pepper; sauté until softened.
Return cooked ground beef to the skillet.
Stir in Worcestershire sauce and Dijon mustard.
Taste and adjust seasoning as needed.
Garnish with chopped green onions.
Serve warm.
