4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon garlic, minced
1 packet ranch seasoning mix
1/2 cup heavy cream
1/2 cup chicken broth
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tablespoon butter
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then cook them in the skillet for 5-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, melt the butter and add the minced garlic. Sauté for 1-2 minutes, until fragrant.
Add the ranch seasoning mix, heavy cream, and chicken broth to the skillet. Stir to combine and bring to a simmer. Cook for 3-5 minutes, letting the sauce thicken slightly.
Return the chicken to the skillet, spooning some of the sauce over the chicken. Sprinkle the shredded mozzarella and Parmesan cheese on top of the chicken.
Cover the skillet and cook for an additional 3-4 minutes, until the cheese is melted and bubbly.
Garnish with fresh parsley if desired, and serve hot.
