¾ lb bacon (about 12 slices)
4 eggs
1 cup diced red potatoes
½ cup chopped green peppers
¼ cup shredded cheddar cheese
Fresh parsley
Salt and pepper to taste
Cut the bacon into 1-inch pieces and place it in a skillet over medium heat. Cook for 5-7 minutes, stirring often, until the bacon becomes crispy.
Carefully drain off about half of the bacon fat and return the skillet to the stovetop.
Add the diced potatoes and chopped green peppers to the skillet, cooking for about 8-10 minutes, until the potatoes are golden brown.
Remove the bacon, potato, and pepper mixture from the skillet and set aside.
Return the skillet to the heat and crack the eggs into the skillet, cooking for about 1 minute, until the egg whites are set. Do not stir.
Carefully spoon the bacon, potato, and pepper mixture around the eggs. Sprinkle the shredded cheddar cheese over the eggs and cook for another minute.
Remove the skillet from the heat and season with salt and pepper to taste. Garnish with freshly chopped parsley.
Serve directly from the skillet for a rustic, delicious breakfast.
