7 g salt
CUT in:
56 g butter, softened
ADD and MIX in:
100 g water, warm
100 g starter
AUTOLYSE for 30 minutes
SPOON KNEAD 50 strokes, every 15 minutes, three times
DIVIDE into balls and BENCH REST 30 MINUTES (USE or FREEZE at this point...THAW 1 hour before use)
FLATTEN slightly then BENCH REST 2 hours
ROLL our very thin
FRY at 500 degrees about 30 seconds per side
STEAM COOL and STORE
