PAN FRY for about 3 minutes then COOL

TOSS CRUMBS with
20 g parmesan cheese
1 t oregano
2 T parsley, minced
MIX BATTER
2 egg whites
2 T grain mustard
20 g flour
DREDGE CHOPS in
1. 30 g AP flour
2. BATTER
3. BREAD CRUMBS
BAKE CHOPS on GREASED RACK at 425 degrees for about 20 minutes
REST 5 minutes then SERVE at 140 degrees internal temperature
