BBQ SEAR pork roast then ADD everything to INSTAPOT
1 (2 pound) lean boneless pork roast, salted, peppered and grilled for 15-20 minutes
MOJO SAUCE INGREDIENTS:
3 cups beef stock
3 cloves garlic, minced
1 onion, sliced thickly
1 orange, sliced
1 lemon, sliced
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon fine sea salt
1/2 teaspoon freshly cracked black pepper
1/2 t Aleppo pepper
1/2 t Sazon
INTAPOT pressure cook for 70 minutes then RELEASE for 20 minutes
SHRED pork then THICKEN with reserved juices on LOW HEAT for 1 hour, adjusting.
