CHUCK ROAST
1 cup beef stock
1 cup orange juice
1/2 T taco seasoning
1 t oregano
1/2 t berbere
1 packet Sazon
1 Roma tomato, diced
1/2 medium onion, sliced
2 cloves garlic
SHRED BEEF then RESERVE sauce and COOL
TRIM BEEF and STEW with 1/3 cup Pico de Gallo, water, taco seasoning, oregano, pepper then REST
PREHEAT oven to 250 degrees
DIP tortillas in SAUCE then TACO FRY in oil to CRISP
ADD CHEESE and MEAT to FRIED SHELL and PLACE in OVEN
