MAKES 6 half-pint jars
GRILL on MEDIUM HEAT (500 degrees) for 5 minutes per side, NOT COVERED
6# Roma tomatoes, halved, seeded, salted and oiled (NET about 1.3 kilos)
COOL, REMOVE some burnt skin
PUREE with (for every 420 grams of tomatoes)
105 g tomato paste
3 cloves garlic (12 g)
1 T salt
1/2 T oregano
1/2 T basil
1/2 T red vinegar
1 t honey
1/2 rosemary powder
1/2 t fennel powder
1/2 t cayenne
1/2 t pepper
1/2 t garlic grains
CLEAN then HEAT jars and CANNER
SOAK lids
BRING PUREE up to SIMMER
ADD 1/8 t CITRIC ACID to each half-pint jar.
LADLE into jars then PROCESS for 35 minutes.
COOL 12 hours then LABEL
