PULSE bread to coarse crumbs.
100 g sourdough, torn
TOAST bread for about 5 minutes in skillet then COOL
1/2 T olive oil
30 g parmesan cheese, grated
1 T basil, minced
TOSS bread with parmesan, olive oil, and basil.
BLITZ then COOK sauce by FRYING and COOLING
1 T tomato paste
2 cloves garlic, mashed
1 can fire tomatoes
1 T basil (top after cooking)
1/4 t salt
pepper
pinch cayenne
DRY, POUND and SEASON the chicken
2 boneless chicken thighs, 300 g
DREDGE in flour then DIP in egg white and water
DREDGE in bread crumbs then SPRAY with oil
BAKE on wire rack at 450 degrees for about 20 minutes
REMOVE and TOP with SAUCE and mozzarella
30 g mozzarella, shredded
BAKE for about 5 minutes
SERVE with pasta and sauce
