CREAM DOUGH
1 t orange zest, finely chopped OR 70 g peppermint candy sugar
40 g cocoa (1/2 c)
150 g sugar (3/4 c)
60 g butter
2 eggs
1 t vanilla
1 t espresso powder
MIX then ADD
135 g AP flour
1 t baking powder
1/4 t salt
CHILL overnight or FREEZE for 60 minutes.
SCOOP dough into BALLS (SMALL COOKIE SCOOP) then FREEZE again
DUST then BENCH REST 10-minutes
50 g granulated sugar
50 g powdered sugar
1 T earl gray tea (GROUND then BLITZED with sugars)
ROLL in sugar again
BAKE at 350 for 11-minutes. COOL on PAN for 5-minutes then COOL on rack.
